In an effort to start eating better and saving money, I've been bring my lunches for work 3-4 times a week. And although I a greatly missing my Cobb salads & deli style chicken salad sandwiches - I am doing pretty well. But after an attempt last night to make some delish banana bread to snack on today I realize I am no Betty Crocker.It wasn't terrible, but something went terribly wrong - I am sad to say. It made my house smell wonderful & looked yummy. It was a great trial & error. My mother claims that it wasn't me you have to feel the recipe out for yourself to perfect it. So I am going to attempt it again this weekend, hopefully with better luck!
I had been planning on making this banana bread all weekend, anticipating something semi-close to what my mom has made for years. The recipe calls for 4 very ripe bananas, the riper they are the sweeter they tend to be. So after waiting what seemed forever - last night I was ready to bake. Ha.
